Kingfish Tataki with Ginger Dressing
Ingredients
Loin piece of fresh kingfish
Dressing
- 6 tablespoons rice wine vinegar
- 1 tablespoon of grape seed oil
- 1 tablespoon of chili sesame oil
- One finely chopped green onion
- One tablespoon grated ginger
- 1 tablespoon soy sauce
- ΒΌ cup chopped parsley
- Pinch of flaky salt.
Method
Make the dressing just combine all ingredients and let sit at least 30 min before use.
Coat your piece of kingfish on all sides with sesame seeds
In a screaming hot pan, a bit of vegetable oil, then sear each side of the king about 30 seconds.
Tightly wrap the kingfish in foil and put in the freezer for about 1/2 hr to firm up.
Thinly slice and drizzle with ginger dressing or ponzu sauce.
